GARLIC CHEESE STUFFED PEPPERS
Now that the weather is heating up nicely, I have found that my appetite has changed. Gone are my cravings for heavy dinners loaded with carbs and instead my body is calling out for lighter options.
I have always been a fan of Philadelphia cheese, be it spreaded on top of a bagel or in a risotto. However, one day when raiding the fridge for things to eat, I decided to mix the Philadelphia with some garlic and add it to a long red pepper.
This really quick and simple dish has become an absolute favourite of mine and I have been making it every week when I have a lunch at home. Here are my steps on how to recreate this dish at home:
Ingredients:
- 1 long sweet red pepper
- 90g Philadelphia Original soft white cheese
- 1 large clove of garlic,crushed
- Black pepper to season
Serves One. I served this dish with some green salad leaves dressed with olives, olive oil and balsamic vinegar.
Method:
-Pre heat the oven to 240 degrees Centigrade
-Slice the top off the pepper and then make a slice down the length of the pepper to de-seed it
- In a bowl, mix the cheese and garlic together making sure that the garlic is mixed in evenly
- Place the pepper on a lined baking tray and fill it with the cheese mix
-Bake for 20 mins
